Additional Rests when Inputting Notes
Instead of replacing the rests, when I attempt to enter notes, it adds the notes and keeps the rest into the same measure, throwing off the tempo. How do I turn this off?

You have possibly enabled insert mode. Use step time which is the default. See https://musescore.org/en/handbook/3/note-input#note-input-modes. in step time measure durations are preserved.
If I have guessed the wrong problem, come back with a more detailed explanation of what you are doing, what you expect to happen and what happens instead.

It's also possible you switched to a voice other than 1. Don't do that - well, not until first fill voice 1.
