One staff
Dear Madam/Sir,
I am wondering if I just want staff, what should I do? I think the default when I create a new sheet is three staves. Thank you!

I think maybe you just want one system as you only have one stave in that picture already. You can remove empty measures (bars) by selecting them and pressing CTRL+Delete (CMD + Delete on a Mac).
Musescore will automatically put measures onto a new line (system) where needed as music is entered. It is best to enter all the music before adjusting layout and before deleting empty measures
