Varaiants between verses
Look at the attached score:
Q1 is when one verse has two notes tied and the other has two notes separate. How to show this even-handedly?
Q2 is when one verse has dramatically different rhythm from the other. is this where I should use voice 1 for one verse and voice 2 for the other. How do I do this (supposing I want to!). In any case I think my solution with Voltas is a lot clearer. Score will follow

dotted, dashed? Yes.
Tie vs. Slur? No, delete the tie and add a slur. It'd sound different.

I did that but it all sounds like a tied note; i w ant a tied note in verse 1 and separate notes in v2

A slur would both note sound, a tie would make them sound as one. Depending on the instrument used the difference might be rather small

I want two notes in v1 but a tied note in v2. Muse score would have to'undestand' that when the text is two syllables (cos he) I want 2 notes, when it is one syllable (and-) I want 2 tied notes

No, MuseScore won't understand (it takes either a tie or a slur, depening on which you used, not depending on which is intended and implied by the lyrics), but your musician(s) will.
Esp. of you use the melisma underscore, like I demonstrated in the attached score
