Any chance I can make it do this? see attached
"Walking in Memphis" has the notes on the two staves connected. I wasn't sure how to do that? I tried the items in the "Beam Properties", but wasn't able to get it to work.

I entered the notes on the same staff as instructed. I put the notes i want to move in the same voice. Then I clicked on the note and pressed Cmd Shift Down and nothing happens.

Are you using a grand staff?
It only works for instruments where cross staff notation makes sense - basically for keyboard instruments. It doesn't work for two separate single staff instruments - even for piano if you created the upper and lower staves separately.
If you attach the score (.mscz) we can investigate further.

You have used two separate single-stave piano instruments. Instead you should have one standard piano instrument (grand staff: two staves) - then change the bass clef to treble clef for the lower stave.

ha ha, I did read but I didn't understand :). So now I have the notes where I want them. The only thing now is to extend the beams from the bottom notes to the top notes. The instructions say double click to expose handles and then do shift arrow. But when I do that, nothing happens. See attached. Thanks

Step by step
Write all the notes in the upper stave in voice 1. Currently you have notes in both staves with those in the upper stave in voice 2 - they highlight green when you select them. (See https://musescore.org/en/handbook/3/voices for when and how to use voices. This is not the time to use more than one voice - only voice 1 is needed).
When you have all the notes in the same voice (voice 1) they should be automatically connected by beams in groups of 4.

Now you can do the cross staff thing. Select the note nor notes you want to move to the lower staff and press CTRL+SHIFT+Down arrow.
The next step is to adjust the position of the beams. This is when you single click on the beam (to enter edit mode) and then single click again to select one of the handles on the beam so that up/down arrows will adjust the height of that handle. (See https://musescore.org/en/handbook/3/beams#adjust-beam-angle). The handbook section on cross staff beaming is not very clear on that last bit. Double clicking puts the beam into edit mode and then selects the right-most handle, but it is really a two stage (or two click) process.

It still doens't look like you've done this correctly. In the first measure, the notes that appear in the bottom staff really are on the bottom staff, and same for top. You need to delete one set of notes and reenter them onto the "proper" staff - all the notes onto the same staff, either bottom or top. Then move the ones you want. Looks like you moved rests instead of moving notes. And, you used multiple voices too. That won't work for this either - the notes all have to be entered onto the same staff, same voice.
