Is there a way to disable accessibility shortcut (like alt+E) on Windows? I have a Mac, and I can bind my shortcut on option+E, but I can't do it on Windows.

Alt+E isn't a "disabilty shortcut", it's simply the standard menu mnemonic. I don't think WIndows provides a way to disable those, but you could try asking on a Microsoft support forum. Is there a reason you'd want to do this? If you don't want to open the Edit menu, simply don't press that shortcut.
