If with brackets you mean the things that appear at the start of the system, you can add them from the Brackets palette (you might need to enable this palette first by clicking "Add palettes").
You can also choose to enable automatic instrument ordering, which should add brackets too; this can be done in the '...' menu at the top of the Instruments panel.
