Keeping a score tempo for next time.

HI.
I have been trying to change and keep the tempo on the scores I use but cannot find where to do this.
I read that I should go to the Tempo Marking and Tempo Text to permanently be able to change it but I only find the temporary View > Play Panel > Tempo board that needs adjustment each time.

Can anyone help?

Select the note where you want the tempo to start. Go to the Tempo Palette. Select (note value) =80. That tempo is now in the score. Double click the 80 (in your score) and change it to the desires tempo.
