Styles Different in MuseScore3 than MuseScore 4
This really upsets me that some styles are changed. Especially fonts and things like measure rests, and beam thickness, etc. Measure rest counts have a weird 0 in front of them, which is annoying. Is there any way I can make the styles exactly like MuseScore3? If not, can you do an immediate update? This causes me to have one of my favorite notation programs slowly drift away.

You can't expect any "immediate update" in response to your request, because you already have the means to override the MS4 defaults.
When you import an MS3 score into MS4, MuseScore offers you the option not to apply the latest fonts and style. If you import a score in this way, you can then save the old MS3 style in the new MS4 score with Format > Save style.... This style file can be used to create a template MS4 file, or you can apply it to any other MS4 file.

You can also add your preferred style file to the MuseScore defaults:
Edit > Preferences > Score > Default files > Style: [style-filename.mss]

I clicked on the "don't ask this again", and regret it. Is there away to undo that, so that when I download a score i can go back to being asked if I want to save the old MS3 style score in the new MS4 format but without updated styles?

Yes, it is somewhere in Preferences

Personally I haven't seen this. Can you post an example score (.mscz file)?

As regards beam thickness, you can also handle that in your style file. Use the menu path:
Format > Style... > Beams > Beam thickness [reduce]
