percussion notes
Is it possible to be able to just write notes with an x on the end of it for drum notation without changing the staff into drum mode or anything? Bonus points if I could highlight a rest, and convert it into such a note.

Sure, just place notes and go into the Properties tab and change the Notehead type to a cross.

Excellent, thank you. Where is said properties tab? I found score properties, but that's about it.

MuseScore 3 = Inspector (on the right)
MuseScore 4 = Properties (on the left)
In both cases function key F8 is the shortcut to hide or reveal the panel.

And note that the properties panel shows the properties only of what is selected. If you want to see/change the properties of a note you must select it first. If you are only seeing score properties that is because nothing is selected, or rather the score as a whole has the focus rather than any individual element.
