How do I get Metatags to work in v4.3.1?
I have the workTitle set, but when I try to add it to the score header all that shows is the string "workTitle"
I have tried workTitle, $workTitle and $:workTitle.

The metatags only work in the Header and Footer. I agree that they ought to work in any text field, but they don't.

As I said, I tried using it in the Header and it did not seem to work. What is the correct syntax to get it to work?

Seems you almost got it use: $:workTitle:

Note that there are colons after the $ and at the end of the tag other than for single letter tags. Also note that tags are case sensitive.
