How do I place a note?
So when my cursor hovers over the lines, a blue note shows up, but how do I place it? Left click doesn't work, and I've tried every other conceivable button.

Left click should do it.
But keyboard entry is usually quicker and easier to get the correct pitch. See https://musescore.org/en/handbook/4/entering-notes-and-rests
Note that everything needs to be entered left to right, so to have a note on beat two you need to have entered beat one (note(s) or rest(s)) first.
