Yes, but not the colors you see in your snapshot. These are the colors that characterize the voices used. And they are not visible in the printout, for example.
Otherwise you can assign any color to the notes in the properties and these are also available in the printout.

Yes, but it's not immediately obvious how to do it.
1. Select the notehead
2. In the Properties panel click the Appearance button
3. Click the black Color block at the foot of the Properties panel to pull up the "Choose color" dialogue
4. In the dialogue choose a new color, then click OK
