Expanding Mixer Channels

I'm new to Musescore, so I started out using Musescore 4. Everything seems good so far, but the main issue I have is that I want to use some custom sound fonts for strings, and I have no way of adding a pizzicato option for them. I recently learned that in older versions, you could expand the channels in the mixer to add multiple sounds for a single channel. In that case, I could easily switch between bowed strings and pizzicato... but now it's apparently not possible.

I saw someone had a work around for this, where you can insert "change instrument" into the score and then just make a separate channel with your desired sound. That seems to work, but I was wondering if this is the best way to do it or if I'm missing something.
