Can't insert a clef
First of all, MuseScore is awesome! I've been looking for a software like this for a while now and I am so glad I've found it.
I created a new sheet using Lead Sheet template, and I'm on measure 5 (new line) and trying to put a clef down and for some reason, it won't stick.
What am I doing wrong?

You need to drag and drop the clef to a measure. Before you drop it, the measure need to be highlighted.

Here is what I am seeing.
If I create a new song from scratch and I put a break on a measure, the next line automatically gets the clef and key signature. But this is not true for a song created from the "lead sheet" template that ships with MuseScore.
No matter how I drag and drop or delete all breaks and re-enter them, there are no clef symbols or key signature on the next line. Perhaps this is a bug? Or maybe it's some kind of setting that's built in to the "lead sheet" template?

Ok. Sorry for the misunderstanding. It's indeed a style setting, if you want or don't want clef to be repeated on each line, go to Style -> Edit Style -> Page -> Create clef for all systems
