Chord Charts
Is it possible to include chord charts for guitar in a score? Or would it just be better to insert an image of the appropriate chord?

If you mean just chordnames, it's already possible in MuseScore 1.0. See Chord name and the leadsheet tutorial .
If you mean freatboard diagram, like the following.
It will be possible in MuseScore 2.0. You can try a [[nodetitle:Comparison of stable, prerelease, and nightly builds|nightly]] . If you want to stick with MuseScore 1.0, images seems to be the solution.

Now that Musescore 3.1 is out, how do I do this, so that it will be played with the main music?

MuseScore 2.0.1 is the current version.

Chords to be played with the main music will require writing a part for the accompaniment. See attachment.
