Key Signature Issue
I tried to see if the issue already exists (since it seems obvious to me), but the search only showed the Handbook references.
Anyway.
First, is there anyway, within 0.9.5, to change the key sig. for all staves in one go? Because, although the option does exist in the Page Style, it's not working. Or am I missing something?
Second, when I insert a key sig. change for a transposing instrument it is not correctly displayed except on the following page (I'm working on a one-system-per-page project). With no courtesy key sig., again in spite of page style setting.

As to your 1st question, here's what I do as a work around:
*Not in Note Entry mode, do select all.
*Under Notes, select Transpose
*Click the box that says "Transpose key signatures"
*Put in the number 1/2 steps up or down that you want to change the key to
*Click Ok.
It changes all the key signatures to the correct key, even in transposing instruments.

Is there a way to turn off some courtesy key/time signatures? Sometimes I want them, and other times I don't. I'd like to be able to get rid of them individually.

There is not a way to turn off key/time signatures individually although you can make them invisible. (Right click, choose "Set Invisible").
I suppose you would want courtesy key/time signatures off at the end of a movement.
The option in the page style that maybe you are referring to is "Create key sig. for all systems" rather than "all staves within a system". If you turn the option off you will see that the key signature appears only on the 1st system.
I'm not sure what you mean by "when I insert a key sig. change for a transposing instrument it is not correctly displayed except on the following page". You will need to give details.
With regards to "courtesy key sig." this style option does not exist in version 0.9.5 or earlier. It was added in the prereleases for the next version of MuseScore.

Hi,
I was working on an orchestral arrangement for a Xmas hymn, with nine staves per system, so the page was taking only one system. I started in C major, then I needed to modulate to D major (not a transient modulation). As I was working in Concert Pitch, to make my life easier, I inserted the two sharps in each staff (rather tedious...), and kept writing for some time. Then I wanted to check that the key sig. for the Horn and the Trumpet were correct, I noticed that deactivating the Concert Pitch leaves two sharps in both staves at the point of insertion, but the correct number of sharps (3 and 4, respectively) on the following page.
Not only that, but I got the same result in the extracted part, but for some reason the part was rectified when I redid the extraction. Weird!

So I added a cross-reference to your comment and bumped it up to critical since it can result in inaccurate scores and parts.

On extracting my parts, and adjusting multi-measure rests, I noticed two things:
1) The bar that has the key sig. change gets engulfed by the multi-measure rest for transposing instruments;
2) Key cancellation is only present in non-transposing instruments.

The latest prereleaes fix many problems with mutli-measure rests. Key signatures are shown.
Could you give more details about the key cancellation or (better yet) check whether it is fixed in a prerelease?

I try not to change releases in the middle of a project. So, I'm attaching the project I was working on; check with and without "Concert Pitch", and compare two extracted parts: the Horn and Violin I, for example, although I'm finding that it's a little inconsistent... For example, the extracted first violins contain key cancellations, but not the second violins!!

The problem is fixed in the prereleases. I would recommend waiting for the stable release before you upgrade for production use. However you can have both installed at the same time to try things every now and again in the newest prereleases.
As a workaround add a line break on the problem parts so that the key change isn't add the beginning of a line.
