Fermata and Hairpins
Can there be an option for fermatas above chords because when a chord like a quarter note is cross staffed, I would have to drag the fermata from the upper staff towards the chord, which makes things inefficient and inconsistent. And also, why do you make it so hard to adjust the mouth of the hairpin?

Adjust the mouth of a hairpin? Do you mean the length of the hairpin by dragging it? It you need a hairpin three measures long (or any number), select the measures and select the hairpin from the palette.

I think you mean the Height value in the Inspector? Personally I find the default Height value of 1.20 too small, so when starting a new score I always increase the Height value of the first hairpin. Then I press the S (Style) button to set this larger Height value as the new default for the whole score.

There are three ways to do this, and each way means you must select the hairpin first. Alternative steps are then:
1. With the hairpin selected, use the Tab key to select the lower anchor point at the "mouth" of the hairpin (4 tab keypresses), then use the Up or Down arrow on the keyboard to adjust the Height of the "mouth".
2. With the hairpin selected, use the Inspector: adjust the Height value using the up or down arrow of the Height field.
3. With the hairpin selected, use the Inspector: overtype the existing value in the Height field.
From what you have described, I think you might find method 1 the easiest way: it gives immediate visual feedback, and it's easy to reverse direction if you "overshoot".
