I went to Edit => Preferences => Advanced => ui/pianoroll/light/background/keys/white/color => Pick Screen Color => white (#ffffff) => Apply => OK. Background is still gray.

alpha is actually labelled Alpha Channel and is above and to the right of the HTML #. It seems this is set to 255 by default, so Jojo is right, you are changing the wrong setting. I'm not sure which one you want to change.

Already tried that. Does not change the sheet to white.

The sheet? Then you're entirely wrong, go to Edit > Preferences > Canvas
