Beam Properies
Why is the beam correctly over the rest only in the first bar?
I have tried everything to get the other beams right, but nothing works.
What am I doing wrong?

(for some reason you had changed the rests offset, you don't need to do that)
Select that 2nd note in the 1st bar, and then select the 2nd nod in 2nd (or 3rd or ...) bar. Watch the beam properties palette while doing that and spot the difference

The point is: you did change the beam properties of the 2nd note in the 1st bar, but not the others, thre you only changed the rests' beam properties. And in a 2/4, 8th notes are by default grouped in pairs

Sorry for the delayed response, I had to go out for a while.
I still can't get the 8th notes in each bar to beam over the rest between them. The beam comes off the first 8th note and then stops
So why won;t the 8th notes beam over the rest?

Is this what you're after?

If so, you can select the note after the first rest and press Beam midd in the Beam palette.

Yes thank you . I got there myself in the end.
I didn't realize it was because in 2/4 time MuseScore groups quavers in pairs and that I therefore had to change the beam properties of the second quaver in each bar.
We all live and learn!
