I'm using Musescore 3. In Text -> Roman Numeral Analysis, is it possible to type "V7 #5" where 7 is a superscript and #5 is put directly under 7?

No, that's not one of the standard notations supported directly. More commonly alterations like that are listed (when included at all) inline, to avoid confusion with ordinary inversion indications. Figured bass, on the other hand, would indeed stack all numbers, so you could consider that instead. Or just add the #5 as a separate element on the same beat, then manually move it into the desired position. Or just use common notation where alterations like #5 and b9 are listed after the 7.
