Turn chord symbols off/on
The Handbook says: To disable/enable playback of version 3.5 or later scores:
Check/Uncheck score/harmony/play/disable New (default is unchecked, playback)
Where is Score? Is this in the Preferences? Because in the Preferences, in the Score tab, I do not see harmony.
I've used a capo so all the chord symbols sound off by a fourth.

In the Advanced tab, excatly as the handbook mentions, see https://musescore.org/en/handbook/3/playback-chord-symbols-nashville-nu… (again)

Isn't the Advanced section used to turn playback of ALL chord symbols on/off in all pieces? I just want it off for this one piece.
It says it is possible to select all the chord symbols. I have tried over and over by clicking on the first and shift clicking the last one, but it never works.
I know it must be frustrating for those who have answered this question before. It is for me too, having asked the question before and copied the handbook answer into my database of hints, but I still don't see it.
The handbook says "Set as style" button (to the right of that box, you may need to scroll a bit). I see "style" but when I click on it there are a bunch of styles, but I don't see the "Set as style" button. There is nowhere to scroll either.

See that "S" button?

Yes! That worked.
Thank you.

Does "Set as style" show as a tooltip when you hover your mouse over that "S" button?
(I'm on Windows, you're Mac)

Yes, it does.

The disableNew preference doesn't affect existing scores; it only affects the default value for the style setting when creating new scores. So, with disableNew off (the norm), all newly created scores from then on will have chord symbol playback on by default, but you can turn them off via the style setting. With disableNew on, all newly created scores from then on will have chord symbol playback off by default, but you can turn them on via the style setting.

It is kind of confusing.

Indeed, but we had to juggle conflicting wishes from different people regarding g what the defaults should be, and also how to handle existing vs new scores, and after a huge amount of discussion here on the forums, this was the best compromise that people were able to come up with.
For most people, it doesn’t matter - the vast majority of people would never have need to even know the preference setting exists. The defaults do what almost everyone wants most of the time already. And for the cases where you only want to cha get the defaults for a particular score, the style setting does in one shot. The preferences are just there to satisfy the small but vocal minority of people who consistently write things (chord symbols) they never ever want to hear.
