All dynamics playback the same

When I playback this file, there is no perceptible difference in dynamics between mf, mp, and p. I checked the velocity of the dynamics in the inspector and they seem as they should be, and I checked the velocities of the notes, which are all set to 0. I even tried exporting it as an mp3 to see if the dynamics worked in the export, but no dice. I need the dynamics to work so I can make a practice recording for my choir!

That's because you've selected a playback sound that is incompatible with the actual instrument you have selected. If you want to use organ, don't just change the playback sound - change the instrument itself, in the Staff/Part Properties. Either that, or at least limit you playback sounds to the non-expr sounds (these won't support single note dynamics).

Also note, having separate dynamics in both staves is not standard and will lead to problems. So delete the ones on the bottom staff. The only reason to have dynamics on both would be if they are different, but to make that work, you'd need to set the range to "staff" instead of "part" in the Inspector.
