1) Add notes
2) Enable "pitch names"
3) Enable "Invert Score" on the "Apperance" settings
Expected: note names to be black when the score has inverted colors.
Actual: note names stay white regardless of score colors.

I believe that's by design (of the SMuFL named noteheads) and not something we can change.

If musescore allow a color invertion (Edit>Preferences>Appearance>Invert score) and ignore paper color and invert note's colors, text's colors, claff's colors and every other symbol's colors, I don't see why don't also invert the notehead name's colors
