Apple M2 Pro chip
12-core CPU
10 GB shared memory
2 TB of storage

As far as I know, that should do it. I'm the cautious type. If it were me, I might by one and see how it works. If you know nothing about notation software, it might help if you figure it out before making a huge investment.
And yet, you should be fine.

I can't speak directly about the Mac Mini M2 Pro, but I have an M2 MacBook Air with MacOS 13.1 Ventura.
MuseScore 3.6.2 runs great with this configuration.
MuseScore 4.01 runs fine—with all its known issues—though not natively, but under Rosetta 2. Rosetta 2 is "transparent" and you wouldn't even know it's there.
All to say, MuseScore should work for you on your Mac Mini.

I have a Mac Studio M2 Max, and after reading about all the issues, I've been hesitant about loading Musescore 4.X .
You say you're running MuseScore 3.6.2 with no issues, so I'll give that a try. I'm assuming that it is also utilizing Rosetta. Have you had any issues?

MuseScore 3.6.2 and MuseScore 3.7 Evolution are stable here for daily use on MacOS Ventura 13.5.2 ( with my MacBook M2; 24GB RAM, 2TB SSD.)
I'm assuming the MS 3.6.2 and MS 3.7 builds rely on Rosetta.

They sure are not built especially for Apple silicone
