Does anyone know where you can find and insert the copyright symbol? I'm surprised that it's not automatic with the template.

When you edit a text, press F2 to access the symbol palette. The copyright symbol is on the right, first row.
I would not put it in a template as a default, you can choose other rights than "All right reserved" for your scores. Especially if you want other people to edit them under some conditions. See Creative commons
If setup for this (on the Menu/Edit/Preferences.../Text tab), a "(C)" in the copyright text gets automagically replaced by a ©. Otherwise/elsewhere you can insert it from the F2 palette

Using (C) to generate the Copyright symbol seems to have stopped working for me, although I have the option ticked in preferences.
Using MuseScore 1.1 on XP Service Pack 3

See my comment in the other thread. The (c) notation should work if entered while editing text, but it doesn't work in the new score wizard dialog.
