As per the current code it won't replace 2.0, but live next to it and peacefully coexists, just like 2.0 lives next to 1.x.
So you bell be able to have 1.x, 2.x and 3.x installed and run at the same time on the same machine.
On Linux the upgrade is automatic for distribution packages but not for the AppImage (at least, not yet!). Of course, depending on the distribution, the Linux package might not be updated for a long time (if ever), but once it has been the upgrade process is automatic for the user.

Way, way too early to be asking a question like that. But probably not.

Will I be able to open scores from MuseScore 2 on MuseScore 3?

It sure will. It would most probably warn about opening 1.x scores though.
