Customizing Text Setting on “Repeat Text”
I’ve tried to change the setting of the text in the Palettes/Repeats category but nothing seems to happen. The way I’ve been trying to do this is through Style/Edit Text Style. I’ve change Font, Size, and Style setting to no avail. When I select Apply nothing seem to have changed to the text in the score, “D.S al Coda.”
Are text not customizable?

It's a known bug in 1.2 that a few text styles don't work, repeats a,ong them (also dynamics). Both are already fixed in 2.0.
But note even for styles that do work, chafes are not applied retroactively in 1.2. So if you wish to change the font of existing text, use Text Properties (and click e"apply to all similar" if desired).

Properties for most items are accessed by right click (ctrl click on Mac). Some item types may not support this, but double click allows you to edit them and change font using the controls that appear at the bottom of the screen.
