Placing lyrics under rests
I wish to place 'sh' under a rest but can't find a way to do it as it keeps saying I have not selected a note.

MuseScore currently doesn't allow for lyrics attached to rests, see #275688: Be able to add lyrics on a rest (silent note).
You could add a note in another voice, make it invisible and silent.

click the rest;
Ctrl+T-> enter 'sh';
click 'sh' open Inspector (F8) set as lyric (even/odd).

Although, if the intent is for someone to actually say /sing"sh" aloud, you shouldn't be using a rest - you should be using a note with a "cross" notehead (see Noteheads palette). Or, if the person isn't supposed to actually say/sing "sh" at all - maybe it's meant to tell the singer how loud to be on the following lyrics, it probably shouldn't be a lyric at all, but a dynamic marking, or staff text as mentioned above.
