How can I change instrument middle-through a score?

As long as you manage to have system breaks at the instrument changes, just have both instruments, enter notes, then use "Hide empty staves", if not, use an Instrument Change text from the text palette and change instrument via that text's properties

Instrument change text is working but it still cannot convert the single stave to two staves... Guess I only have the choice to hide empty staves...

Right, it can't. "Hide empty staves" is the the way to go then (and usually the better way anyhow), and if you want/need the change mid system, you can add a horizontal frame, and then change its width to 0
