So I've tried this is various *buntu distros, gfx are HUGE
I was using Kubuntu, and now in PopOS, and I guess you can see from the attached image what the issue is. The interface is HUGE but some things like the fields and text are fine. What could possibly be the issue here?

Check the icon size settings in Edit / Preferences. Or just do Help / Revert to Factory Defaults, as who knows what else might be messed up.
Could also be an issue detecting your monitor resolution correctly, but you'd be seeing worse than just abd icon sizes in that case. Still, could be worth telling MuseScore your monitor resolution explicitly with the command line option "-D dpi" (dpi being 72, 96, 300, or whatever).

Same for me on a Mint. The problem is the DPI resolution of the monitor.
With those dimensions the system becomes unstable and the interface commands inaccessible.

Okay so is there a way to have it avoid that all together so it will display properly?

I can't help you, but:
On Vista 32 bit->Ko;
Mint on Vista 32 bit->Ok;
On 7 64 bit->Ko;
Mint on 7 64 bit->Ok;
On 10 64 bits->Ok;
Mint on 10 64 bit->Ko.
Try downloading Snapshot 32 bit?
