You can always follow the recent changes per language: in your Account block at the right you will see the recent changes link.
In case of the Italian recent changes at http://www.musescore.org/it/recent_changes
you will see the changes to add italian pages as well as some pages which are language independent such as the developer pages. In some time I will remove these language independent pages. But in the meantime, the recent changes page will answer your question whether someone is working on the translation or not.
Also, in order to see what needs translation or updating, you can check on this page:

Thank you for your informations, but my question was about the software translation (file mscore_it.ts): some items are not translated or wrongly translated.
Moreover with my account it's impossible to go to the page http://musescore.org/en/admin/content/translation_overview_assignments/….

There is indeed an issue currently with the www prefix. When you log in at www.musescore.org , you are not logged in for musescore.org without the www prefix. It's a stupid problem for which there is no solution for yet. To be continued.
