converting to music
I don't read music very well so If I record an instrumental on Garage Band will this program translate into standard notation so that someone can read it and play it back who does read music?

No it will not. No program will do that. A lot will claim and you can spend several hundreds dollars while looking for it. The best way is to send the audio file to a musician and it will transcribe it.
