There is already a pianoroll display in MuseScore in which you can edit note velocities.
Unfortunately that is as far as its editing capabilities go at present.
You can access it by right-clicking on a bar (measure) and choosing "Pianoroll Editor" from the menu.
Okay.
I didn't notice that an editor ist already existing.
