Selecting One Instrument
I'm wondering if it's possible to select the whole score but for just one specific instrument, and then being able to copy and paste it, etc.

Sure - click the first measure, then shift ctrl end (windows; presumably there is a similar standard shortcut to select to end of file on other systems too).
