Default ninsheetmusic/Jester Musician style

Everything on ninsheetmusic.org and all of Jester Musician's scores have the same general style settings. Is there an direct list of what I would need to change to replicate this?

The closest thing to a standard is what MuseScore already does by default - these settings are based on what is most common in the publishing industry. But if some particular publisher does things differently, you'll need to determined for yourself what they are doing and how to emulate it.

Simplest thing to do would be to open in MuseScore the one you want to copy the style from, go up to Style > Save Style..., then in a score you want to make match, Style > Load Style....

if you are specifically talking about text style, it is a known issue that loading a style won't change *existing* text elements right away. It will affect text elements not yet created. If you have existing text elements you want changed, click them and hit the Reset Text to Style button in the Inspector.
