Add > text > tempo -- can I set what this defaults to?
When I "add > text > tempo", it comes up as "1/4 note = 80."
Is there a way to edit this default value - to come up as 165 for example, instead of 80?

No. But you can add a 165 marking to a custom palette if that is a tempo you use often. See the Handbook under "Custom palettes". You can also copy and paste tempo markings from one place in a score to another.
