How do you combine rests
In the screen shot attached, in the last measure how would I go about consolidating the rests? I would like to have one eigth rest, 2 dotted quarter rests. The time signature is 12/8

simply enter the rests you want in the order you want. Exactly the same as if you wanted to enter an eighth *note* followed by two dotted quarter *notes*, except instead of typing the letter name of the note to enter it, you type "0" (or click the rest icon them click the staff if you prefer clicking to typing). Te newly entered ests will simp,y replace whatever was there before, just as happens when entering notes.
