Big ass numbers across measures...how do I remove the big ass numbers and long bar so measures are usable?

Right click Select all similar elements-> Del?
Press M
I assume you are talking about multimeasure rests. These are normally off by default, but you may have inadvertently turned them on. Pressing "M" will turn them back off, as suggested above.
