Set custom default instrument long/short names
I assume the names for the instruments are loaded from a file. Is there a way to change them?

Do I break things when I edit that?

As long as you don't break the Format, no.
It's probably better to create your own customized copy of that file, then tell MuseScore (via Edit / Preferences) to use your version.
Note for many of the purposes where you might at first think about editing this file, the better solution is to simply create a template (which you do have to place in the main MuseScore templates folder, at least until 2.0) and creates scores from that.
