Add beams?
Can someone look at this (attached) song and tell me how to create it just like this (but I need to change the notes one step up in order to match the accompaniment recording I have).
What time signature would I select when first creating the song to make it let me enter 8 notes in one measure like this?
How do I make the notes connect? Beams?

You would need a regular 4/4 time signature unless you want it to be cut time, and you need a pickup measure
As explained elsewhere, to enter eighth notes, simply select the eighth note duration before entering the notes. Don't enter them s quarters then try to change them - that won't produce the desired result. Use the same time signature as shown in your example, 4/4, aka common time (denoted with the "C" symbol).
