I believe that in the manual you will find explanations on how to make them.
For special cases, and detailed, there are forums ;-)

Why a feature request per PDF rather than plain text here?

I would like to be able to notate music similar to Alain's "Litanies"
http://imslp.eu/files/imglnks/euimg/9/97/IMSLP123863-WIMA.fde9-Alain_Li…
and Béla Bartók - Six Dances in Bulgarian Rhythm

in Musescore with correct beaming.

You can do this already, by hiding/disabling the time signature and tweaking the measures' actual duration, and also tweaking the beaming.
See https://musescore.org/en/handbook/staff-properties#common-staff-propert…, https://musescore.org/en/handbook/measure-operations#duration and https://musescore.org/en/handbook/beams

I was about to say the same, it would be nice to have "no time signature" function. For contemporary music this is pretty standard and you have to deal with note values not fitting in the time signature you selected, and if you change the time signature sometimes it messes up the spacing of the score and you have to put it together manually. Of course it can be done (and i did it) but i think it would be a nice feature to have.
Also this would be a really nice thing to write sketches on.
