All of the answer ARE in the handbook. All of the jump symbols (Coda, D.S. al Coda and so forth) are found in the Repeats and Jumps palette. Select the measure where you want one and double click it and it will be in the score.

https://musescore.org/en/handbook/repeats-and-jumps#jumps is where these are specifically found in the handbook. This was in the second item listed when I searched for Coda in the online handbook. If you have the PDF handbook, search the word Coda and you will find it.
