Editing Text elemnets
When I select a text element to edit I get the box with options to change size, fonts etc but nothing happens to the selected text when I make changes in this box.
Also how do I change the default size of system texts?

The items in the text toolbar are for changing individual text inside a text box.
If you click the bold button (for example), then start typing, what you type will be bold, what is already there will be unchanged. You can also select all or part of the text and press the bold button to make only the selected text bold. This overrides the settings in the inspector.
To change all of a text type (like system text) at once, you can change it for one text of that type in the inspector (press F8 if you don't see it) the press the S button to the right of that option. All current and future text of that type will then have that attribute. BTW, Shoichi's method works also.
