In MuseScore 3 you can find the "arco" and "pizz." directions on the Text palette.

These special text elements already have the correct properties set in order to trigger either bowed or pizzicato playback, starting on the note where you placed the Text element.
In MuseScore 2 you had to do it the long-winded way, as described here: https://musescore.org/en/node/50196
