Hello, I've been working on an orchestration for strings, and the violin phrasing is all messed up.
It is articulating every single tone of the phrase, breaking the continuity of the line.
Could you help me with this issue?

Real, actual legato on violin is not possible in MuseScore, but you can go a long way towards good phrasing. Please see this tutorial https://musescore.com/bsg/phrasing . See what you can do.

Indeed, I wrote some works in the older verisons of the software, which was working really fine.
I don't know what changed in this newer one, I didn't get a smooth phrasing even using slurs, the violin still articulates every tone and the sound drops out before the next one.

I don't think you read my tutorial. Slurs do nothing for the violin. They work only for piano and flute. You have to change the off-times for each note (easiest with plugin).
Nothing has changed in this respect, although perhaps you were previously using a different soundfont that had a more legato attack? Anyhow, again, nothing has changed here, MsueScore has never supported playback of slurs for violin. If you have further questions or concerns, please ask for the help in the Support forum, not here in the issue tracker, which is intended for bug reports. There is alreadya feature request for slur playback: see #9345: Playback of slurred notes. As you can see, it's been this way for many years.
One thing I can see is that you have apparently chosen the "Slow Violin Expr." sound for your score (in View / Mixer), or picked a template that uses it. This sound is not intended for fast-moving passages like this. You would probably like the results better with the regular "Violin Expr." sound. The same would have been true in older versions.
