Right-click onte the staff > Staff/Instrument Properties > Change Instrument. Or via the mixer
Or, simply create the score you want to begin with. I'm guessing you are starting with the default demo empty score, but no need for that, there are dozens of templates instrument choices available when you create you own score with File / New.
