How does MIDI input work?
I see a button on the toolbar that is labeled MIDI input but have no idea how to use it. Is there special gear that needs to be attached to the PC? Can an existing song be played to create a score?

See https://musescore.org/en/handbook/note-input-modes . You certainly must have a midi keyboard or other midi input device, and perhaps a midi-USB adapter if the device requires one. You cannot simply play a piece and obtain a score -- that's beyond the state of the art. But you can enter notes, one voice at a time.
I would just add to the above, if you have a MIDI keyboard, then, you can connect it and use it instead of your computer keyboard to enter your notes one at a time. It does work, but it isn't any faster or easier, so I wouldn't be looking to buy one just for this.

Thank you for that clarification. I had been hoping / thinking about getting a midi keyboard assuming musescore would then get the notes and durations just by playing it. Rats.
