Cant assign new sound from mixer
From Mixer I am unable to assign a different sound to the Contra bass in the Symphonic score
I can in the classical orchestra score.
No matter what sound I assign from drop down menu it sounds like an electric bass

It sounds like you are either trying to change the wrong instrument or somehow you are changing sound fonts when you change from symphonic to classical but that would really surprise me.
Perhaps for #1 you don't realize you can click the arrow at the top of the volume control for the contrabass and it will expand to show all of the channels rather than the first channel only. I'm betting you want to change the pizzicato channel. This is for MuseScore 3, MuseScore 2 always showed these expanded.
