1) create a score with two instruments: piano(G clef), soprano
2) press "i" and change soprano to another instrument, say, ukulele
3)export the midi file
4) We can find three tracks: piano, soprano, ukulele. But soprano is not what we need actually.
I uploaded a template that contains 5 staff ( 5 instruments). However, when I export a midi file, there are 8 tracks( include some instruments I have replaced with)

I am not really seeing this, but it's also not clear how you are testing the MIDI file. The example contains a staff that uses marimba sound, and on import this is assigned to the "Marimba (Grand Staff)" instrument, but still only using one staff, and as far as I can tell there is only one track.

I made two tests :
T1
a) Create a score with piano and saxo soprano
b) Export as a midi file
c) Open the file with midieditor
e) Change soprano to ukulele
f) Export as a midi file
g) Open the file with midieditor
T 2
a) Create a score with piano and saxo soprano
b) Change soprano to ukulele
c) Export as a midi file
d) Open the file with midieditor
In both steps T1g and T2d, i observed two tracks (one for the piano, the second for ukulele)
