Midi port / Channels

I do not understand what are the right options in the midi port (out) and the channel next to it. I looked at the manual but it has no details about it.
Until now I did not mind these at all, until a midi port was found in position 2 (attached image) and while it was a certain instrument the piano played the guitar. I thought they came in automatically, but they do not, so I would like to know by what criteria I have to define them myself.

Δεν έχω καταλάβει ποιες είναι οι σωστές επιλογές στο midi port (out) και στο channel δίπλα σ' αυτό. Κοίταξα το εγχειρίδιο αλλά δεν έχει λεπτομέρειες σχετικά μ' αυτό.
Μέχρι τώρα δεν τα πείραζα καθόλου αυτά, ώσπου βρέθηκε ένα midi port στη θέση 2 (επισυναπτόμενη εικόνα) και ενώ ήταν ορισμένο όργανο το πιάνο έκανε αναπαραγωγή κιθάρας. Νόμιζα πως μπαίνουν αυτόματα, αλλά δεν είναι έτσι θα ήθελα να μάθω με ποια κριτήρια πρέπει να τα ορίζω μόνη μου.

I'm unsure about how that part of MuseScore really works; but I always thought that MuseScore assigns port/channels automatically upon score creation.
So the first instrument of the score would then be on port 1, channel 1. The next one on port 1, channel 2 etc.. It is possible that drumsets are an exception as I seem to recall those must be on channel 10 to work out correctly.

I also think that when using MIDI out from MuseScore it currently messes up the port assignment and throws everything out onto port one (not sure whether that still is the case).

Hoping that someone more familiar with this part of MuseScore will step into this conversation and clarify a bit more.

I test some new scores and the instruments take right places. Port 1 and channel 1-16 (including the extra channels that have some instruments) and then goes to Port 2 channel 1 etc. However in each case the drums play correctly at 10. Thanks for this information @Jeetee I din't realize before you tell me that.
But if I open an old score everything is mess and almost anything playback the right soundfont. For example I give you this file and even if it sounds almost right when playing all the instruments, if you listen to the violin alone it has a different sound. And whatever sound I choose in this mixer plays the same.
